Pineapple upside-down Cake

Recipe follows.








Volunteer sunflowers from my Garden. 
They always bloom early. 






 The next group, the planted sunflowers, bloom much later.







The wonderful thing about Pineapples, they are always available.  








When not being used in a recipe they make fine centerpieces. 



Pineapple upside-down Cake
Line baking dish with
1 fresh Pineapple cut up into small pieces
4 Tb unsalted butter, melted
½ cup of brown sugar

Mix together
1¼ cups sifted flour
½ cup sugar
½ tsp sea salt
2 tsp baking powder
½ cup melted butter
½ cup of fresh orange juice
juice from ½ lemon and
2 Tb grated lemon peel

Mix all ingredients and add one beaten whole egg.
Stir batter two minutes by hand with wooden spoon.
Pour over Pineapple mixture.
Bake at 375 for 30 minutes or until golden brown.
Let stand 5 minutes, turn upside down.

  1. I recall that as one of the cakes I made just about weekly when the children were small - it was easy and so yummy, and we didn't have money for fancy baked goods! I still love the idea of upside down cakes and make the French versions nowadays with either pears, apples or plums. . . . . . . . and tomorrow with figs of course!!!

    Your sunflowers are beautiful Gina, and the pair of urns in the last photo are just stunning.

    1. Dear Mary, I like your idea of the French version of upside-down cake. Having a fig tree would be ideal. And to think that your trees came from a garden shop when they were in small planters.
      I see that my apricots are ripening. I will give them a try. But there is something about the intense flavor of pineapple that makes this cake a favorite all around.

    1. Dear Val, This recipe is just about the easiest way to a most delicious cake. It's a recipe that never fails. Everyone loves the tanginess of the pineapple, even people who normally don't like the fruit. Sometiomes I even add a dollop of whipping cream when company comes.
      We are working on a trip to Portugal next April...would love some ideas from you.

    Rarely have I sliced a pineapple that has not been juicy and sweet. Your upside-down cake sounds delicious and I like that it does not take long to bake and can be eaten right out of the oven. With a little whipped cream I can taste it in my imagination right now. However, I must try to make it for real soon...........

  6. Dear Sieglinde, I know that you will like this cake. Not only is it delicious but very forgiving if ingredients are not followed precisely. The whipping cream laced with a little brandy wouldn't hurt either.
